A great combination of colour, taste and texture makes it perfect for any occasion.

Ingredients for one serving:

a handful of baby spinach leaves
1/4 of a pineapple (medium size)
1/4 of an avocado (medium size)
10-15 almonds
60g of soft goat cheese*

Vinaigrette dressing:
1 tbsp of olive oil
1/3 tbsp of freshly squeezed lemon juice
a pinch of fine sea salt
a pinch of black pepper


Wash and dry baby spinach leaves.

Wash, peel and slice the pineapple and the avocado.

In a small jar combine oil, lemon juice, salt, and black pepper.

Close the jar and shake it well.

In a mixing bowl, combine all the ingredients.

Add the dressing and a sprinkle of oregano.

*Goat cheese could be replaced with: vegan cheese, grilled tempeh or tofu.
