A delicious, healthy, no-bake date peanut bites, excellent dessert idea.
1/2 cup of ground unsalted peanuts
50g of date paste*
1 tsp of raw sesame seeds
a pinch of fine salt
1 tbsp of unsalted natural 100% peanut butter
2 tsp of rose blossom water**
1 tsp of orange blossom water**
1/5 tsp of cinnamon powder
1/2 cup of non-sweet “Muesli” unsweetened cereal flakes, to garnish
Grind the cereal flakes using a food processor or crush it using a rolling pin. Place it into a small bowl and leave it aside for decoration.
Finely chop or grind the peanuts using a food processor.
In a food processor, pulse pitted dates to create a thick paste. If your date paste is very wet, add some ground Muesli to it.
In a medium size mixing bowl combine ground peanuts, date paste, a pinch of salt, rose and orange blossom water and peanut butter.
Scoop the mixture with a spoon. With clean hands, form any shape you like: ball, pyramid, tubes, etc.
Coat the bites with the ground cereal flakes.
Store the bites in an airtight container and keep refrigerated for 5 to 7 days.
*Date paste is largely available in Middle Eastern grocery stores. It comes in well sealed “brick” form packs. The humidity of date paste may vary depending on the date of production and storage conditions.
**In this recipe I am using “Cortas” rose and orange blossom water. There are many brands of essential water, “Cortas” happens to be one of my favourites.
