A festive beverage typically made with various mulling spices and red wine.
Sweet, spicy, warming winter drink with a citrusy note, perfect for the winter Holidays.

This recipe will serve 2-4 people.

200g (1 metric cup) of white granulated sugar
200 ml (3/4 metric cup) of cold water
1 vanilla bean (without the seeds) or 1 tbsp of pure vanilla extract
the peel of 1 orange
a few orange slices
750 ml (1 bottle) of dry red wine

For the spice mix:
3 sticks of cinnamon
9 anise stars
9 green cardamom pods (crushed)
6 cloves
9 black peppercorns
9 allspice pods
1/4 tsp of freshly ground nutmeg powder, optional

For decoration:
1 orange

Wash and dry the oranges.
Leave one for decoration purposes.
Peel the other one using a vegetable peeler (remove the zesty part of the skin) then cut it into slices.
Cut the vanilla bean in half along side and carefully remove the seeds (use the seeds for baking).
In a saucepan combine sugar, water. Add the vanilla pod and orange peels.
Bring it to a boil, then simmer on medium high for 5 minutes.
Add the rest of the ingredients to the syrup and let it simmer on low heat for 30 minutes.
Cut the orange reserved to decoration in 1 cm (1/2 inch) slices.
Using a ladle, pour the mulled wine directly into the glasses.
Decorate each glass with a slice of orange.
Serve it warm, reheat the wine if necessary.

The Mulled wine could be made in advance and warmed up before serving.
