Sweet, soft and chewy lemon-vanilla cookies.
1 cup of all purpose flour or plain flour
1/4 tsp of salt
1/2 tsp of baking powder
50g of unsalted butter
1/4 cups of powdered (icing) sugar
2 tbsp of yogurt 3,5% fat
1/4 tsp of lemon zest
1 tsp of pure vanilla extract
Cut the butter into cubes and let it soften at room temperature.
In a medium bowl combine flour, salt and baking powder.
In a large bowl place room temperature butter, egg, sugar.
Mix until the sugar is well dissolved.
Add yogurt, lemon zest and vanilla extract.
Gradually add the dry ingredients.
Combine all the ingredients and form a soft dough.
Place the dough in the fridge, until it cools down.
Preheat the oven to 250C (480F).
Roll the dough on floured work surface until 0.5 cm (1/4 inch) thick.
Use round cookie cutter or a glass to shape the cookies.
Slightly press with the fork to create a fork pattern.
Transfer the cookies to the baking sheet.
Bake in preheated oven until golden-brawn.
Transfer to the rack, and let the cookies cool down completely.
Sprinkle with some powdered (icing) sugar.
Due to the fact that the quantity of flour may vary depending on humidity level, storage conditions, flour brands, protein levels, type of flour, it is important to add it gradually.
